  1. I cook soy cubes in spiced water with lemongrass, coriander seeds, black pepper seeds, cloves, curry, and salt for about 30 minutes, until they get soft. Then I rinse them and marinade in mustard, a few spoons of soy yogurt and ground coriander and cumin seeds.
  2. I cut the pineapple into cubes and put them onto a skewer, in between the soy cubes.
  3. I grill the skewers on a non-stick pan or grill.
  4. I grate carrots, add salt, pepper, agave syrup, lemon juice, lemon zest, and mustard.
