Real Deal Roast


  • smoked seitan loaf
  • apples (slightly sour)
  • cranberries

  • coconut oil
  • soy sauce

  • marjoram
  • wild oregano
  • ground cumin
  • dry chili


  1. For this roast, I prepare a thick loaf of seitan. I make a few deep cuts across the loaf and glaze it with soy sauce, mustard, red pepper, black pepper, marjoram, wild oregano, and a pinch of dried cumin. I leave it in the marinade at least for an hour, or best overnight. Then I roast it in the oven at 200 degrees C / 390 F for at least 45 minutes.
  2. I peel apples, remove the seeds and cut into 1x1cm cubes. I saute them in a little water (instead of fat) until semi-soft. I add cranberries, grated lemon zest, and chopped chili. I stir well and cook with a closed lid for a few minutes more into a thick chutney.
  3. When the roast is ready, I glaze it with lemon juice, add apple chutney and roast for another 15 minutes.
